Strawberries: 2/3 Cups
Flour: 225 Grams
Baking Soda: ½
Teaspoon
Baking Powder: 1 Teaspoon
Salt: 1Pinch
Sugar: 225 Grams
Butter: 125 Grams
Egg: 1Large
Egg Whites: 2 Medium
Vanilla Essence: 1Teaspoon
Whole Milk 3.5% fat: 60ml
Pre-heat the oven to 175 C. Line cupcake
tin with paper cups.
Clean and chop or puree strawberries, set
aside.
Mix and sift flour, baking soda, baking
powder and salt.
In a standing mixer cream butter and sugar
together. Add vanilla essence.
Once everything is incorporated, add eggs
one by one and let it all get mixed.
Reduce the speed of the mixer and add flour
in two batches alternating with milk.
Add Chopped or pureed strawberries. Mix
till everything is well combined. But do not over mix. Scoop out in prepared baking tin. Bake for 18-20 minutes
Cool completely before frosting.
Strawberry Frosting
Strawberries: 1.2 Cups
Butter: 225Grams
Confectioners’ Sugar: 225Grams
Vanilla Essence: 1 Teaspoon
Puree Strawberries and set aside.
Sift Confectioners’ Sugar and set aside.
In a mixer put butter and confectioners’
sugar and mix.
Add Vanilla essence.
Once the frosting is light and fluffy,
slowly add the puree a teaspoon at a time, until it is all incorporated very
well.
Pipe the frosting on the cupcakes and
decorate with fresh berries and small sugar flowers.
